Happy St. Patrick’s Day. Whether or not your lucky-Irish you have to admit it’s a fun excuse to celebrate…even if that’s just eating something green-ish; maybe to go with your green beer 😉
In a blender or food processor:
1/2 tub Bramble Hill Pea Shoots
1/4 cup good quality olive oil
1/2 cup raw walnuts
A splash of balsamic vinegar
A splash of maple syrup (or honey)
Blend until paste. If you’d like it a bit thinner add a tbsp or so of water.
Use this pesto on your pasta of choice: penne, macaroni, or spagetti. This pesto is also great as a spread on a sandwich, a burger, or as a veggie dip.
In these photos I also topped my pasta with fried paneer cheese (click here for explanation) which is a super mild, unsalted cheese. When you cube it up and fry it a bit in a pan it doesn’t melt but it crisps up – so yummy!
